What should I cook myself tonight

Post by JamieLee2k »

I am going to the shop in 1 hour and I am thinking of things to cook myself!!!!

What do you guy's/gal's suggest I have?

I don't want something that will take about 4 hours to cook. (You know what I mean)

Spare Ribs, toss up a salad, and some mashed potatoes with gravy.

Simple, and tasty.

pesto pasta chicken...

roast some chicken breast and then make the pasta. you will also need to make the pesto, but that is easy to make(get a recipe off the internet for pesto). you mix this all together and it is a tasty dish. be carefull not to go overboard with the pesto because it can be strong stuff if you use to much.

well thats my 2 cents, if you try it let me know if you liked it.

oh yea, it is made from a few different herbs, so if you are not into that kinda thing then you probably wont like it. :D

Oh ya, tha's some good stuff.

1litre of pesto= (Food processor needed) add 2 teaspoons of salt, 2 teaspoons of pepper, about 250ml of whole peeled garlic (or less), 500ml of the nut of your choice (pine or cashew being the best, but walnuts will do), blend until coarsely chopped (you can add a bit of the oil to aid with this), fill a 8 cup measuring cup or juice container with fresh basil leaves that have been de-stemmed and removed from excess water and add it to your mixture, slowly add 500ml of olive oil and there you have it, PESTO!

Try grilling the chicken till almost cooked, cool it, slice it. It will cook the rest of the way in the fry pan.

Advanced:
You can also add lemon, cream and parmaseon cheese as the base sauce when cooking in the pan, adding pesto as you see fit. This is a bit more difficult as it requires you to reduce the cream sauce (gets thicker with cooking, always keep stirring it or it will burn). After it reduces, then you add the chicken, pesto, snow peas, peppers etc... The finer you chop the veggies the better it will taste, within reason. Takes practice.

You can always freeze a portion of your 1 litre of pesto. Ya don't need very much per serving.

Oh btw, this kicks ass with smoked salmon too. mm salmon :D

I'd use a short noodle for the pasta: fusilli or penne is nice.
The more I drink, the less I care.
