Are these fast enough to put your swap file on? Or maybe load a whole OS on them? I've never got to play with one and was gonna pick one up just to play around with.

No keep the pagefile on the hard drive, google around for bootable flash drive images, setups and stuff, theres a few kinds, one may work for you.
