I'd like to setup a couple of computers with a guest account but I've never really dabbled into the correct way to set one up. I've never played in the policy screens etc etc.
Are there any good sites that explain how to setup a robust guest account and the various workings that a beginner could follow?

I'm not sure on how much control you want to have, but setting up just a standard user account that is not a member of the local admin group is easy.
Also for protection as far as kids, Windows Live Family Safety

And setting up your router to work with OpenDNS instead, and setup a free account and add content filtering. OpenDNS automatically blocks known malware distribution sites, so you get an added layer of protection there.

I second Windows Live Family Safety with YOSC, it works great. Another free add-on is WOT which has child filtering available with a free account.
